Head Pastry Chef

Responsibility

Reporting to the Executive Head Chef, the Head Pastry Chef (“HPC”) will initially assume direct responsibility for our Parlour Afternoon Tea service, will develop our Parlour evening snack menu, will oversee the Oliveto dessert menu and will produce pastries/cakes for our morning breakfast into mid-morning service.

Haddington House is located on the sea in an affluent area 15 minutes from Dublin city. We will be building a second sea-facing garden restaurant with an ambition of Michelin 1 star and an alimentari/bakery shop with direct access from the street. This is in addition to our current Oliveto restaurant, Afternoon Tea service and Parlour snacks.

The ambition of the company is to establish Haddington House as an independent five star hotel with multiple culinary offerings across the hotel. Our culture is to teach, develop and nurture talent.

Key Tasks

  • To take full responsibility for running the pastry/bakery offering across HH

  • To continue to improve our offering across Oliveto, Parlour and Breakfast

  • To prepare all foods under the direction of our Executive Head Chef

  • To proactively lead in compiling seasonal menus, keeping abreast of current food trends

  • To launch our seasonal Afternoon Tea service

  • To take responsibility for stock, waste, production and GP performance

  • To ensure all deliveries are properly checked, labelled, rotated and stored in line with HACCP standards

  • To ensure a high standard of personal hygiene, uniform appearance and organisation

What we’re looking for

  • Passion – for all things pastry-related, and a determination to keep pushing for excellence

  • Attention to detail – it is essential that the HPC has strong attention to detail as this is a very multi-faceted role

  • Initiative – in line with your main responsibilities, demonstrate a willingness to develop, improve, show initiative and an appetite to contribute to our menu creation

  • Flexibility – you must be flexible especially in unexpected situations when the business may ask you to work additional hours to plug a hole

  • Stress tolerance – stress levels are high in kitchens. A good HPC has a high stress tolerance and can show calmness and control for other staff to follow

Job Requirements

  • Located in Haddington House in Dún Laoghaire

  • Scheduled week is Tues - Sat

  • Average working week is 40 to 44 hours

  • Six month probation period

  • Accommodation can be provided in the short term
